Lesotho - Moroko Mash

Lesotho is a landlocked country which is completely surrounded by South Africa. I have to admit it's a country I'd never heard of before this! I have now though :)

Ingredients:

Kale
Potatoes
Stock
Salt and pepper


 Chop the kale up quite small.


 Peel and cube the potatoes.


 Heat a bit of oil in a pan and saute the kale for a minute or two. Season with the salt and pepper.


 Add the potatoes and cook for a further 2 minutes so the potatoes are coated in oil.


 Add a cup of stock plus any water needed to cover the vegetables.


 Simmer until the stock is reduced and the potatoes are soft.


 Mash the potatoes and serve.


I really liked the kale in the potatoes but the stock made them really salty. It would've been better to add the salt and pepper after simmering to see if it was needed. I liked the look of the mashed potatoes as they were much darker than traditional UK mash. A tasty dish and a nice alternative to having vegetables separately. Somewhat similar to Irish Colcannon.
