Croatia - Krostule

This sweet pastry is traditionally served at Easter and translates to 'sweet knots' in English. Ingredients: 2 eggs 2 tbs sugar 1/2 tbls butter, melted 1 1/2 cups flour 1 tsp vanilla extract 1 tsp water Pinch of salt Oil for frying Icing sugar for dusting
Put the eggs in a bowl
Whisk until the eggs are thick and lemon coloured
Add the sugar and salt and whisk until dissolved
Measure out the flour
Add half the flour, water and vanilla extract to the eggs and whisk in
Add the rest of the flour and the mixture should form a dough. Add more flour if needed. Knead for 5 minutes
Chill the dough for 15 minutes in the fridge and then roll it out until it's about half a centimetre thick
Cut into strips then knot each strip
Heat some oil in a pan and add the knots a few at a time to fry
When the knots float and have browned they're ready to take out
Drain on kitchen paper
Dust with some icing sugar and eat still warm
I was really pleased with how these turned out. The Krostule puffed up nicely and were delicious. My kids loved them too and want me to make more. Which I might because they're easy to make!
